She Crab Soup Recipe by Mr. Make It Happen

SHOPPING LIST
  • 1 lb Lump Crab Meat (preserving some to garnish)

  • 4 tbs butter

  • 4 tbs flour

  • 1/2 grated onion

  • 1-2 stalk grated celery

  • 1-2 tsp minced garlic (optional)

  • 2 bay leaves

  • 1 cup half & half cream

  • 2 cups heavy cream

  • 1.5 cups chicken stock or seafood stock

  • 1.5 tbs lobster base

  • 1 tbs Worcestershire sauce hot sauce to taste

  • 1/2 cup sherry (plus more if desired) old bay, salt & pepper, garlic powder, and onion powder to taste

COOKING INSTRUCTIONS
  1. In a large pot, melt 4 tablespoons of butter over medium heat.

  2. Add 4 tablespoons of flour to the melted butter and stir to create a roux. Cook the roux for about 2-3 minutes, or until it turns a light golden color.

  3. Stir in the grated onion, grated celery, and minced garlic (if using). Cook for an additional 2-3 minutes until the vegetables become tender and fragrant.

  4. Add 2 bay leaves to the pot.

  5. Slowly pour in 1 cup of half & half cream and 2 cups of heavy cream while stirring constantly to avoid lumps. Continue to cook and stir until the mixture thickens, which should take about 5-7 minutes.

  6. Pour in 1.5 cups of chicken stock or seafood stock and 1.5 tablespoons of lobster base. Stir to combine.

  7. Season the bisque with 1 tablespoon of Worcestershire sauce, hot sauce to taste, and a 1/2 cup of sherry. Stir and let it simmer for an additional 5-7 minutes to meld the flavors.

  8. Season the bisque with Old Bay seasoning, salt, pepper, garlic powder, and onion powder to taste. Adjust these seasonings to your preference.

  9. Gently fold in most of the lump crab meat, reserving some for garnish. Continue to cook for another 2-3 minutes until the crab meat is heated through.

SERVING
  1. Serve the She Crab Soup hot, garnished with the reserved lump crab meat and an additional drizzle of sherry if desired.
