Cheesy Hamburger Helper Recipe by Mr. Make It Happen

  • 1 diced onion

  • 1 can chipotle peppers in adobo

  • 8 oz sharp cheddar cheese

  • 8 oz colby jack cheese

  • 8 oz mozzarella

  • 1/2 lb elbow macaroni

  • 1 lb 80/20 ground beef

  • 1/2 tsp beef bouillon

  • 1 tsp chili powder

  • 1 tsp cumin and smoked paprika

  • AP Seasoning to taste

  • 1/2 cup sweet corn

  • 1/2 cup black beans 1

  • /2 cup fire roasted tomatoes

  • 2 tbsps tomato paste

  • 1 cup beef broth Mexican Crema (garnish)

Avocado Salsa:

  • 1 cup diced tomatoes

  • 1/4 cup diced red onion

  • 1 large diced avocado

  • 1 lime juiced salt and pepper

  • 2-3 tbsps diced cilantro

DIRECTIONS FOR Cheesy Hamburger Helper Recipe PREPARATION:

  • Preheat your oven to 375°F (190°C) for baking the mac and cheese.


  1. Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until it's al dente, usually about 8-10 minutes. Drain the pasta and set it aside

  1. In a skillet over medium heat, cook the 80/20 ground beef until it's browned and crumbled, usually taking about 5-7 minutes.

  2. Stir in the diced onion and cook for another 2-3 minutes until the onion is softened.

  3. Add 1/2 tsp of beef bouillon, 1 tsp of chili powder, 1 tsp of cumin, and 1 tsp of smoked paprika to the beef and onion mixture. Season with all-purpose (AP) seasoning to taste. Stir to combine the spices.

  4. Stir in 1/2 cup of sweet corn, 1/2 cup of black beans, and 1/2 cup of fire-roasted tomatoes. Cook for an additional 2-3 minutes to heat the mixture through.

  5. Add 2 tablespoons of tomato paste and 1 cup of beef broth. Stir to combine and let it simmer for about 5-7 minutes until the mixture thickens and flavors meld together.

  1. In a separate saucepan, melt the sharp cheddar cheese, colby jack cheese, and mozzarella over low heat, stirring constantly until the cheese is completely melted and the sauce is smooth.

  2. Pour the cheese sauce over the cooked elbow macaroni and stir to combine, ensuring the pasta is well coated.

  1. In a baking dish, layer the mac and cheese with the chipotle beef mixture. Make sure to spread it evenly.

  2. Place the baking dish in the preheated oven at 375°F and bake for about 20-25 minutes, or until the top is golden and bubbly.

  1. While the mac and cheese is baking, prepare the Avocado Salsa. In a bowl, combine 1 cup of diced tomatoes, 1/4 cup of diced red onion, 1 large diced avocado, the juice of 1 lime, salt, and pepper to taste, and 2-3 tablespoons of diced cilantro. Mix well and set aside.

  1. Serve the Chipotle Beef Mac and Cheese hot, garnished with Mexican crema and a generous scoop of the Avocado Salsa on top.
